| The grape varieties
In Subirats several varieties
of grape are being grown. The most traditional
have been produced for centuries, while others
have been introduced only a few years ago.

Xarel·lo

Xarel·lo
It is an autochthonous white variety from de
Penedès and the most grown in the region.
The grains are round, gold-coloured and with
a thick rind. Its ripening procces usually
has very equilibrate characteristics, so it
is quite versatile and it can be used to produce
serveral kinds of wine, and cava as well.

Parellada

Parellada
It is the third autochthonous white variety
and it adapts very well to stony and little
fertile terrains. Its grains are round and
medium size. It gives out very aromatic slight
grading wines.

Macabeu
|
Macabeu.
It is an autochthonous catalan white variety
of a secular tradition. In other places of
the State it is known by the name of Viura.
Its grains are between medium and large size,
and its rind is very thin. With it, dry white
wines with fruity aromas are produced. It is
also one of the varieties which intervene in
the elaboration of cava.

Ull de llebre
|
Ull de llebre.
It is a black variety traditionally grown in
the Penedès. It is wide spread throughout
all the vine growing zones in the Peninsula,
where it is named with nouns like Tempranillo,
Cencibel or Tinto Fino. The grains are medium
size and they present an intense colouring.
With it, rosé and red young wines are
obtained, but also great mature wines can be
elaborated if one lets it reach the optimum
ripening point.

Merlot

Merlot.
It is a foreigh black variety which has adapted
very well in the Penedès. The grains
present a very intense violet colouring. With
it, young rosé and red wines are elaborated,
but it also produces good mature wines since
it can reach a high alcoholic grading.

Cabernet Sauvignon

Cabernet
Sauvignon.
Black variety which is distinguished for producing
wines with a special personality, with intense
color and with aromas which become complex by
the aging. It has adapted very well in the Penedès.
