The general purpose of these
is to know the landscape of vine-yards in Subirats
and all its elements: vine-yards, climate,
vegetation, territory, farm-houses, etc.
The vine, together with wheat and olive tree,
is the most classical cultivation of the Mediterranean
coast. The three of them form what is known
by the name of Mediterranean trilogy, which
has been cultivated for millenniums. Since
the cultivation of vine has developed in a
parallel way with the Mediterranean cultures,
we don’t find it exaggerated to talk
about the culture of vine and wine.
The vine is is a cultivation which requires
a continuous dedication during the whole
year. In winter, the yards must be ploughed
and the
old vine shoots must be cut off; in spring,
the trees must be cleared of all useless
leaves as well as air the earth; in summer
chemical
treatments which guarantee the perfect sanitary
state must be made and weeds must be eliminated.
Finally, autumn arrives, and it is time to
harvest the ripe grape and start the production
process of wine and cava.
All this work has developed by the introduction
of new techniques, but the basic process
has been the same since five centuries
before Christ.
